Quinoa Pancakes
These quinoa pancakes are super easy, super clean and require very minimal ingredients! They’re also great for using up leftover cooked quinoa.
After successfully creating a quinoa muffin and quinoa granola, I really wanted to take quinoa to the next level and create my all-time favorite breakfast food (besides waffles, of course)…. pancakes! It took just a few trials to get things right. My goal was to keep the ingredients to a minimum and the calorie count fairly low. I also wanted to develop a recipe that only made one serving because, in my household, we typically all eat something different for breakfast. If you want more than a single serving, it’s very easy to double this recipe.
With a little trial and error, by the way…. I didn’t have the best results using egg whites, these quinoa pancakes came out perfectly. They are nice and fluffy with a really great texture. If you love quinoa as much as I do, you’re going to be head-over-heals for these pancakes! Quinoa is definitely a grain that you want to include in your diet.

- It is a complete protein containing all nine essential amino acids.
- Quinoa contains almost twice as much fiber as most other grains. It’s gluten-free too!
- Quinoa is a great source of iron, lysine, magnesium, riboflavin and manganese.

Quinoa Pancakes
Ingredients
- 3/4 cup cooked quinoa
- 1/4 teaspoon baking powder
- 1/4 teaspoon cinnamon
- pinch of sea salt
- 1 packet stevia, optional
- 1/4 teaspoon vanilla
- 2 eggs
Instructions
- Heat a large skillet (or griddle), sprayed with cooking spray or coated with coconut oil, over medium heat.
- In a medium bowl, combine all ingredients.
- Pour batter onto skillet (or griddle), making 4 pancakes.
- Allow pancakes to cook slowly over medium heat for about 3-5 minutes on the first side, until pancakes are set. Flip and cook for another 1-2 minutes.
- Serve with maple syrup, honey, nut butter and/or fresh fruit.

Just what I was looking for! We had leftover quinoa from dinner and didn’t want to save it because it never gets eaten. But I also have a baby I’m doing baby led weaning for, so I started looking up a recipe to use the quinoa for him. All of the quinoa fritters were super complicated or contained cheese— and he’s dairy free right now! But alas! I found this one and they turned out perfect. Going to send some in his lunch. I’m wondering if they’ll freeze? Only one way to find out! Thank you ? ?

Thx so much! I’m into easy and simple, and wanted to use the whole grain, not flakes or flour, since I purchased a huge bag! These were g8: they ‘worked’– the eggs did indeed hold it all together and yet did not burn. I added some nutmeg, and next time–yes, there will be a next time–I will use more cinnamon and nutmeg. These are terrific! Substantial yet fluffy, and very easy to make. Added dried blueberries to the batter, and they came out great. Thanks for the delicious way to use up leftover quinoa.

How long will the batter stay in the refrigerator? I can’t eat four at one time.

No, the quinoa is cooked and with the eggs that holds everything together.
Just gobbled them upfor dinner as I just had some syrup, eggs and quinoa and no desire to go shopping in the rain. Will make these again. I think it makes sense to find the right amount of maple syrup so you don’t drown out the quinoa and turn it into dessert. I used a small amount and it still felt healthy. Also added butter, honey, almonds that I had around the kitchen.

I made these pancakes this morning! I tweaked it by separating the eggs and whipping the whites. I folded the egg whites to the rest of the other ingredients. The batter was fluffy and held together great! Delicious! I’ll be making these regularly! I believe they would be great as a savory dish too! Thanks for the recipe!

I used quinoa flakes, which I cooked and then made the batter for the pancakes. I followed the directions and fried them up. They never cooked! I made sure to give more than enough time, but alas, when I ate them they were a slimy uncooked mess! I was so excited to try these and then so disappointed. Should I have used regular quinoa instead of the flakes? Would like to try again.
I’m sorry that you didn’t have success with the recipe, but the recipe calls for cooked quinoa, not quinoa flakes. Hope you get a chance to give it another try!

These sound great! I am definitely going to make these, I have some leftover red quinoa sitting in the fridge waiting to be used up. I have a couple questions, though.
Without any flour/breadcrumb and just the quinoa, eggs, and baking powder, how well did these hold together once you had to flip them? Yours look amazing and like they didn’t even crack! Knowing my luck, I’d end up with quinoa pancake scramble 🙂
And, I don’t think I have quite as much as 3/4C of leftover quinoa, should I still use 2 eggs, or just 1?
Surprisingly, they stay together well. The egg is really what helps to bind them, so if you just have a little less than 3/4 cup quinoa, I would go ahead and still use 2 eggs. Good luck!
Success!! Made them this morning and they turned out perfect (didn’t fall apart at all), by your directions and descriptions anyways. I’m so proud of myself, this is the first time I’ve tried to make pancakes that weren’t out of box *blush* And to have my first try be flour-less, quinoa pancakes?! Ballsy, haha. Turns out I did have 3/4C of quinoa leftover, so I followed your recipe exactly, and got 4 pancakes. Fluffy, though? Ehh, I cooked my first two maybe a minute too long on the first side, and the pan was probably too hot. They were a touch dense, but I know that’s because of the lack of flour and fat.
I couldn’t leave well enough alone, even though I probably should have for the first go around. I added in 1/2 scoop of vanilla protein powder and 2 TBSP of ground flaxseed. Also, blueberries 🙂 Drizzled them with a lemon/honey/yogurt sauce and I was a happy camper. Such a fulfilling breakfast, perfect for a lazy Sunday morning. 4 pancakes is a big serving, for me anyways, when I do these next time I’ll either halve the quinoa used, or just make the 4 and store 2 of them for another morning (do you think the raw ‘batter’ would hold in a container well for a few days, too?)

I don’t actually think I’ve ever baked with quinoa before, but it’s definitely on the to-do list. I usually make oatmeal for breakfast since skillet watching and pancake flipping is a little too much work for me in the morning, but I do love pancakes for lunch or dinner 😀
