I’ve tried a bunch of mug cakes and I wasn’t a fan.
I thought they were a really neat concept for a quick dessert fix, but nothing would ever beat baking an entire cake or cupcake. I hated that all the mug cakes came out SPONGY and they had the grossest texture. But not this one! I feel like the secret to a light, tender, amazing texture in mug cakes comes from leaving out the eggs. That’s right! No egg in this recipe. It’s not only easier to make without an egg, but it turns out so much tastier! And it’s super easy to make vegan.
Even my picky kiddos loved this single-serve mug cake recipe. They’re such huge fans, we’ve already made this more times than I could count. Even for a special breakfast treat! This has all of the classic flavors of your favorite cinnamon roll, but without any of the rolling and waiting!
Ingredients needed:
One of the best things about this mug cake recipe is that it’s made with basic ingredients that you probably already have in your kitchen. Here’s what you’ll need:
- Flour. For best results, use either all-purpose flour or Kodiak Cakes pancake mix. I’m sure other pancake mixes would be great substitutes too!
- Baking powder. To give the cake a bit of a rise. If you’re using a pancake mix, you won’t need this ingredient because it’s already included in the mix.
- Milk. I use unsweetened vanilla almond, cashew milk or coconut milk, but any milk variety will work fine.
- Maple syrup. For the perfect amount of sweetness. If you don’t have maple syrup, you can use granulated sugar or brown sugar, but may need a bit more milk for consistency. Or you could use honey.
- Vanilla extract. Gives this treat a boost of flavor!
- Oil or butter. A small amount of oil or butter will ensure that this has the perfect moist texture.
- Brown sugar + cinnamon. Swirled into the top for that classic cinnamon roll flavor! If you don’t have brown sugar, regular granulated sugar will work in a pinch.
How to make this recipe
This healthy mug cake recipe could not be easier! If you don’t believe me, watch the video tutorial located in the recipe card. Here’s the simple process:
- Prep the mug. Start by greasing a microwavable mug with cooking spray, butter or oil.
- Combine cake ingredients. Mix together flour (or pancake mix), baking powder, milk, maple syrup, vanilla and oil (or melted butter) inside the mug. Add 1-2 tablespoons more of milk, if needed for consistency. You want the batter to stay thick, but not be too dry. Alternatively, ingredients can be stirred together in a small bowl and then transferred to the mug.
- Cinnamon/sugar topping. Whisk together the brown sugar and cinnamon in a separate small bowl. Sprinkle the mixture over the top of the batter, in the mug. Use the tip of a knife to swirl the cinnamon mixture into the top of the batter. (See above photo.)
- Bake. Microwave on high for about 1 minute and 25 seconds. Remove the mug from the microwave and, if desired, transfer to a plate. Be careful as the mug will most likely be SUPER hot. Enjoy!
Pro tip: Don’t over-mix your cake batter! Mix until all ingredients are just combined. Over-mixing can cause this to become tough.

I still seem to get this question a lot and a mug cake is literally as it sounds. A cake that is made in a mug! It’s great because you don’t need to whip out a bunch of tools to make this simple dessert recipe. Just pop it in the microwave and it’s done in a matter of minutes!
I personally have not cooked this particular mug cake recipe in the oven. Feel free to experiment, though, and give it a try. Based on some other similar recipes, if I were going to try this one in the oven, I would bake at 350ºF for about 14 minutes. A few reasons why your mug cake might become chewy when cooked is overcooking the batter in the microwave or adding too much liquid. Start with the minimum cooking time, test for doneness, and add a few more seconds as needed.

This sweet snack is pretty perfect as-is, but there are lots of ways to change it up and customize the recipe based on what you’re craving. Here are some tasty options:
- Cinnamon roll icing. Enjoy this cinnamon roll mug cake with icing, just like a REAL cinnamon roll! Stir 2 tablespoons powdered sugar with 1 tsp milk (plus more as needed) until smooth.
- Pancake mix flavors. Pancake mixes come in lots of different fun flavors. Change things up and use a different flavor. Depending on what flavor you use, you may want to change up the cinnamon/sugar topping.
- Birthday mug cake. Leave the cinnamon/sugar topping off, add sprinkles and serve with Funfetti frosting and a scoop of vanilla ice cream. You could also swap the vanilla extract for cake batter extract, if you happen to have some.
- Coffee cake version. Make the cake as instructed, but instead of adding the cinnamon/sugar topping, add a streusel topping. Mix 1 tablespoon melted butter, 1 1/2 tablespoons all-purpose flour, 1 tablespoon brown sugar, 1/8 teaspoon ground cinnamon and 1/8 teaspoon salt. Sprinkle the streusel over the batter and press gently with your fingers. Then, bake as directed.

Expert tips
This mug cake recipe is really straight-forward and easy to make, but here are a few tips so your dessert or snack is perfect every time!
- Different microwaves can vary in power and how fast they cook, so the first time you make this recipe, you’ll need to experiment a bit to make sure that the cook time is the correct length of baking time. At least, even if it comes out undercooked, there’s no need to worry about raw eggs!
- How long to cook? When I make this, it’s done to my preference in one minute and 25 seconds at 100% power. If you’re new to making mug cakes, check the cake after one minute and you can always add time.
- Oil or butter. I typically make the cake using oil, so I don’t have to worry about melting the butter. If you’d like to use butter, feel free to use unsalted or salted butter.
- What type of mug? A mug with straight sides is best to ensure that the cake bakes evenly. I use a microwave-safe 14-ounce mug, which is a great size to allow the dough to rise up while baking without overflowing. (You can fill your mug with water and then pour the water into a measuring cup to determine its capacity.)
- Alternatives to a mug. If you don’t happen to have microwave-safe mug, try using any of the following: small porcelain ramekin, small ceramic bowl, small glass prep or mise bowl.
- Be careful when removing from the microwave. Your mug will most likely be VERY hot. Use a hot pad or oven mitt when removing it from the microwave.

- 1/4 cup all-purpose flour or Kodiak Cakes pancake mix*
- 1/4 teaspoon baking powder
- 2 tablespoons unsweetened vanilla almond milk or other milk + 1-2 tablespoons more, as needed

- 1/4 teaspoon ground cinnamon
Instructions
- Spray a microwavable mug with cooking spray and then mix together flour (or pancake mix), baking powder, milk, maple syrup, vanilla and oil (or melted butter) inside. Add 1-2 tablespoons more of milk, if needed for desired consistency. You want the batter to stay thick, but not dry.

Really good, but I had to cook it for 2 minutes 30 seconds. My microwave must be underpowered. I also added walnuts. If I made it again, I would add less of the brown sugar.

good recipe. the cooked batter itself was not as sweet (i didnt expect it to be because there was no sugar in the recipe) so i went ahead and added cinnamon chips. complete life saver!! they went so well with the cooked batter. this is a great recipe for those intolerant to lactose looking for a dairy-less dessert. i would recommend about a tablespoon or two, three to be generous, of cinnamon chips and, for a little extra sweetness, a sprinkle of extra sugar on top after swirling the cinnamon brown sugar mixture.

I’m glad I trusted the process! This is delicious!! I thought how could it possibly duplicate the bready aspect of a cinnamon roll without yeast? It does! I doubled it because I had a larger much and had no issues- cooked 1 minute 30 seconds. Also followed the tip to swap maple syrup for brown sugar and it worked great.

The only reasons for my 4 star rating is that, in my humble opinion, it’s cloyingly sweet and too dry. Here are my modifications:
– 1/2 teaspoon vanilla extract (instead of 1/4 tsp)
– 1/2 tablespoon syrup (instead of 1)
– 1.5 to 2 tsp brown sugar (instead of 1 tbsp)
– 1 tablespoon melted butter (instead of 1 tsp; definitely recommend butter for the cinnamon roll taste)

I like the recipe but after microwaving I noticed once’s it cooled it would immediately turn hard I used all the right ingredients and measurements and so I don’t know what caused it but when it was warm it tasted really good

It’s a little bit dry and spongey so I’ll probably add a little bit of vegetable oil next time so it’s a little more moist, but over all it tasted really good and I can definitely taste the cinnamon!

This is the BEST mug cake recipe ever! The cake was so spongy and moist and it tasted just like a cinnamon roll. I used pancake mix and microwaved mine for about 30 seconds more, and it turned out delicious! I will definitely be making many more of these.

hi! thanks for posting; this was great. I had a craving for something a little sweet and this was perfect. I followed the recipe but used unsweetened coconut milk (since that’s what I had open) and melted Earth Balance instead of straight oil. I think the saltiness of the Earth Balance complemented it well, and I think the unsweetened coconut milk also made the overall profile not too sweet. I had some open pure cacao/no sugar chips, so I mixed some in with the cinnamon/brown sugar topping. wonderful!

Honey would be a good substitute. If you want to omit it altogether, you might want to add some sweetener and possibly a little extra almond milk to make up for the lack of liquid. Enjoy!

I made this the super lazy way- ie without the icing or the cinnamon swirl- and it was still delicious! Luvin it! I used Almond Milk and next time will try what Petra (above) suggested- using applesauce instead of oil. ?

Can you provide ingredients for an easy frosting to fit this?
Try mixing a couple of tablespoons powdered sugar with 1-2 teaspoons milk (any type).

This recipe really is delicious! It doesn’t quite taste like a cinnamon roll to me but is an almost perfect dupe for my favorite coffee cake.

I’ve been craving cinnamon rolls for a few days and this hit the spot. I’ve made other mug cakes in the past, usually chocolate, and while they were ok, this was fabulous. I used butter and added a small amount of powdered sugar icing made with almond milk after turning it out on a plate. Otherwise, I followed the recipe exactly. So good! Will definitely be making this again.

Do NOT use almond flour as a sub ? cake was totally liquid after 2 minutes. Made it again with regular flour and was delish!

Can I bake this in the oven? If so, what temp and how long?
I haven’t personally tried it, so I can’t say if it would work. If I were to try, I would bake at 350ºF for about 10 minutes. Check it and possible bake longer, if needed.

This is the best mug cake ( cinnamon roll) my granddaughter and I have tried. And since the closing of the schools and being at home soooo much since the pandemic has been on it’s world tour, we have made so many different kinds. But this one has the texture and taste of something made by a wonderful Bakery or Baker and is now number 1 on our list of favorite mug cakes and our Nutella mug cake moved to 2nd place. Thankyou so much for sharing this wonderful and easy recipe.
Just a note, we did use pancake mix and real maple syrup that we made here at home and used melted butter instead if coconut oil.

This is my go-to for dessert cravings now. Best mug cake ever!!!! I use Kodiak Cake mix and just stir all of the ingredients into a bowl and microwave the entire thing for 45 seconds. Makes a perfectly sized, moist, delicious cake. I also top sometimes with a powdered sugar/almond milk “glaze.”

I love this mug cake!!!! Finally an actual mug cake that gives you the satisfaction of a real cake but much, much faster and healthier. I used Kodiak cakes pancake & waffle mix and followed the recipe exactly & it came out perfect!! I’ve tried lots of mug cakes before & none of them had the right texture or taste I was looking for. This cake was spongy, moist (sorry(:) and had great flavor! Thank you for sharing this gem of a find(:

I was a bit skeptical about trying this since I feel like it’s hard to get mug cakes just right, but this turned out fantastic! Googled for a homemade mug cake recipe after making my first mug cake using the packaged stuff that came in a mug as a gift. I had my kids (four in all) make their own with some assistance and everyone had a ‘thumbs up’ response(the husband included :o). It was a great treat for the kids to bake their own cake.

I tried it and it was yum!! I doubled the cinnamon though and added a tiny bit more sugar. Would taste great with icing!
I just mix a 1-3 ratio of milk and powdered sugar and pour it over. It’s really nice if it turns out a little dry because it adds a bit of moisture!
Loved this! Made a few substitutions – neutral oil instead of coconut, as that’s all I had, and a touch of brown sugar instead of maple syrup as I didn’t have any. I also added some cinnamon to the actual mix, and to me that made all the difference – I’d probably add more next time! And stir the top in more as it was gone too quickly at the top! Ate it straight from the mug, so didn’t worry about greasing it either.

This was so EASY, fast and really yummy! I used gluten free flour, which might be why mine came out with sort of a half-baked texture, but I actually really loved it like that (kind of like a real Cinnabon!) I also topped mine with cream cheese frosting. Heaven! The hubby and my picky son loved theirs too! Thanks, this recipe is a keeper!

Loved this! I made it with an added pinch of salt and replaced the coconut oil with margarine (butter would probably taste even better but I wanted to keep it vegan) to add a richness that is more typical of cinnamon baked goods. Because the cake uses maple syrup and mixed-in brown sugar, in the top of the batter anyway, I added a pinch of baking soda in addition to the baking powder, which is generally used in a neutral pH batter. The resulting coffee cake was soft with a delicious crumbly texture and a classic coffee cake flavor. Yummy!

I used whole wheat flour and used closer to 1tbsp of coconut oil and it still came out great. Satisfied my craving, wish I had some icing. Next time I think I might add some banana and walnuts ?

Is there a way to not use syrup? I’m not a fan of it and don’t think I’d like the taste in my cinnamon roll.
Definitely! The maple syrup is used to sweeten the cake. Try using 1 tablespoon brown (or white) sugar, coconut sugar, honey or a packet of sweetener, like Stevia. You may actually enjoy it just fine leaving out the sweetening agent altogether. If you do leave it out, you may need to add a little more almond milk to moisten it up a bit. Good luck!

I accidentally didn’t read and added 1 tbsp coconut oil instead of 1 tsp and holy moly it was still amazingly delicious. Topped with some strawberries and a little ice cream. yum!

Just have to let you know that this was wonderful! I am gluten-free and egg-free so I used Pamela’s Pancake mix and left out the baking powder – WONDERFUL! The taste was great and so so easy. I had some leftover powdered sugar frosting so I put a dollop of that on top when it was still warm. JUST LIKE A CINNAMON ROLL.

Love this cinnamon mug bun recipe! It satisfied my morning cake cravings ?. Much quicker than making all the bread. I made myself a couple as I get quite hungry but one was still great! Tasty! Just made a double batch in a large mug… because #pregnancycravings. I used a 6-grain pancake mix from Costco, and while it’s grittier than I like my cinnamon rolls, it has at least temporarily appeased the less-than-healthy craving for Cinnabon! Thanks!

I think this is by far the easiest and the best recipe for mug cinnamon rolls. I tried two cinnamon rolls, one with oat flour and one with pancake mix and I would recommend the pancake mix over the oat flour because my homemade oat flour didn’t rise, but I still loved them both. (I don’t have regular flour, only oat and pancake mix) I think you should try to make an easy icing too, just in case some people with a bigger sweet tooth come on here.
