Banana Date Blondies
Happy June and happy Monday, to ya! June always makes summer feel official. I’m sorry, I don’t have the most summery of recipes for you today, but if you need a quick and easy sweet treat that everyone will love, give my Banana Date Blondies a try!

It’s been way too long since I’ve posted a dessert recipe and I knew you guys would love these Banana Date Blondies. If it’s not a dessert recipe you’re after, these work fabulously as breakfast bars or snack bars. My picky kiddos even enjoy these healthier blondies.
I’ve been making this recipe for quite some time. It’s just one of those go-to sweets that you don’t feel too guilty for devouring. They’re also dang easy to throw together- if I need a quick and easy dessert, that I know everyone will love, I make these blondies. All you’ll need is one bowl, so cleanup’s a cinch.
Naturally sweetened mostly with extra ripe bananas and diced dates… the flavor is incredibly scrumptious. A perfect little after dinner treat with creamy coffee or hot tea. They’re very adaptable too- throw in some chopped walnuts, dried fruit, shredded coconut or better yet… how about some chocolate chips or peanut butter chips.
I’ve even used my favorite pancake mix instead of flour to make these and it worked perfectly. So easy peasy, but most importantly, they’re soooo tasty too!
Banana Date Blondies
Ingredients
- 1 cup flour*
- 1/2 cup coconut sugar, regular sugar or brown sugar would work
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons cinnamon
- 2 very ripe bananas, mashed (about 1 cup)
- 2 tablespoons extra virgin olive oil, other oils would work
- 2 eggs, whisked
- 3/4 cup finely chopped dates
- 1/2 cup chopped walnuts, dried fruit or chocolate chips (optional)
Instructions
- Preheat oven to 350 F degrees. Spray an 8x8-inch square baking pan with non-stick cooking spray.
- In a large bowl, combine flour or pancake mix, sugar, baking powder, salt and cinnamon. Create a well in the center of the combined dry ingredients. In the center, whisk eggs, banana and oil together. Then stir wet ingredients into dry ingredients until just combined. Fold in dates and any other optional ingredients (if using).
- Transfer batter to prepared baking pan and spread evenly. Bake for approximately 25-30 minutes.
- Let bars cool completely in pan before cutting- enjoy!
Notes
- This recipe works fabulously using pancake mix, specifically Kodiak Cake Pancake Mix, instead of flour. If using pancake mix, omit the baking powder and salt.
- When measuring out flour or pancake mix- spoon mix into measuring cup and use a knife to level, for most accurate measurements.
- If feeding a crowd, double the recipe and use a 9x13 baking pan.

Delicious. I added coconut, used brown sugar, and substituted aquafaba for the eggs.
I really liked that they were low fat yet full of flavor.

Loving your recipes and really wanting to try the banana and date blondes but here in the uk I’m used to using grams in recipes not cups. Can you tell me how many grams I need of each please or how many grams in a cup? Thanks ?

These are amazing! Thank you for a brilliant recipe. I had two seriously overripe bananas, some dates and walnuts and was looking for something quick and easy to do with them. So glad I picked your recipe. I missed that it said to ‘finely’ chop the dates, so will make sure I do that next time. I used light spelt flour and a little less coconut sugar and (unless it is really important to the recipe chemistry!) I think it would be sweet enough for me without it. I also added some chopped 85% cocoa chocolate which gave a lovely added deep flavour. My mom has recently started a diet for those who have MS. She has the same symptoms and stuff like that, but the doctors aren’t 100% sure it is. Because they can’t confirm it, she wants to try the diet before starting meds. Anyway, she wanted to some dessert, and to also get rid of some bananas and dates that we had, so I looked up what to bake. Since she has a limited diet, I had to find something she could eat. I found this, and she loves it! So does the rest of my family!! Also, what I did was replaced the regular flour with GF flour, and EVOO with coconut oil! They love it! Thank you so much!
