Peanut Butter Cup Superfood Smoothie
You guys are going to love this Peanut Butter Cup Superfood Smoothie! It’s quite possibly the most scrumptious smoothie you will ever sip. It’s packed protein and nutrient-rich ingredients, but tastes just like a drinkable peanut butter cup!
Coming out of the holidays where sweets and treats are everywhere you turn around, I’m craving greens and all things nourishing. And at the start of the new year, I like to reflect on the past several months and look ahead to what I want for the next year. I don’t necessarily make resolutions, but I definitely always have new goals in sight that I challenge myself to reach.
After completing the 21 Day Fix EXTREME last year, I’ve set my sights on Autumn’s newest workout and nutrition challenge, Hammer and Chisel. I’m SO excited to be starting today! Giving myself the challenge of a new workout plan is my favorite way to stay motivated and keep exercise fun.
Now just because I’ll be eating clean foods doesn’t mean I don’t need a little something to satisfy my sweet tooth. This Peanut Butter Cup Superfood Smoothie does that and more! Perfect pre or post-workout to truly energize your body, fuel your muscles and delight your tastebuds!
Peanut butter and chocolate is a winning combination no matter how it’s paired. For a low calorie, low sugar treat with amazing flavor, I mixed in Jif Peanut Powder instead of peanut butter. Jif Peanut Powder has 85% less fat than regular peanut butter and is made with just one ingredient- fresh roasted peanuts, making it perfect for keeping those diets and cleanses in check.
I was able to easily find Jif Peanut Powder, while shopping at Walmart, conveniently located near the traditional peanut butter products.
Not only is this peanut butter cup smoothie full of deliciousness and superfoods to make you feel wonderful, it’s also really easy to whip up. You can just mix all ingredients together, but I decided to make things a little more interesting and create and layer two different smoothies, to make sure you get chocolate and peanut butter in every bite.
The cast of characters include chocolate protein powder (cocoa can also be used), Jif Peanut Powder, banana, spinach, celery, cucumber, ice and Silk Almond Milk. I love the addition of Silk Almond Milk in my smoothies because it keeps them dairy-free and makes them oh so smooth.
For my first layer, I blended ice, Silk Unsweetened Vanilla Almond Milk, Jif Peanut Powder, spinach and banana.
The chocolate layer included ice, Silk Unsweetened Vanilla Almond Milk, chocolate protein powder (or cocoa), spinach, cucumber, celery and banana.

This looks and sounds awesome! Who doesn’t like PB and chocolate???!! But what is up with the celery? Is there a health benefit to it. Just wondering, because I don’t like celery at all. I would most likely leave it out, but was wondering if there was something to it. Thanks for the recipe. I haven’t tried PB powder yet, but now I think I’ll have to give it a try!
Thanks, Heather! I often put celery in my smoothies to up the greens and you can’t really taste, but definitely leave it out if you prefer. Hope you get a chance to give it a try!
I have not tried Jif Peanut Powder just yet, but this smoothie recipe has me thinking that I should brave the negative digit wind chill to pick up a bag. YUM! This looks like it would be a great morning or post-workout smoothie. (client)
Oh my and I thought it was cold in Texas! You definitely should give Jif Peanut Powder a try! 🙂
Oh, man! I still need to try and find this JIF Peanut Powder. I have looked in a local Walmart before and they did not carry it. I might have to go to a different Walmart location to see if I can scope it out. I LOVE peanut powder, but want to try this JIF brand.
It’s super delicious! Hope you’re able to find it. One Walmart near me had it and the other one did not, so hopefully one of yours will too!
Gah, your pictures have been so amazing lately, Kim (not that they weren’t before, but now they are extra good!). Did you update your camera body/lens?
Thanks so much! That seriously means so much because I’ve really been working hard to improve my photos. I upgraded my camera about 6 mos ago to a Canon Ti and I’ve actually been thinking of upgrading again maybe this summer, but I really want to take a few classes first. I would like to attend one of The Pinch of Yum’s photography workshops, this year. I’ll just have to see if it happens to be at a good time for me. I got this lens for Christmas last year and it has been a game changer-http://amzn.to/1PdOZBF By the way, your photos are looking awesome as well!
I SO want to update my camera body and lens, but on most days I just can’t pull the trigger. It probably doesn’t help that we are currently spending money on a wedding in April and saving for a house! Hopefully sometime soon I am able to do it. Do you normally buy off of Amazon or somewhere else?
