Similar to this simple shrimp bowl, Key West is known for it’s laid-back “come as you are” attitude. Key West is one of my absolute favorite places to visit. It’s truly a place of relaxation and beauty, full of plenty of exciting fun activities. Whether you’re in search of a do nothing hang out at the beach all day kind of vacation or you’re the type of person that is always on the go… there’s honestly something for everyone.
The island is not only home to a strong seafood scene, but a tantalizing fusion of cuisines. At night, the streets are lit up with vibrant sidewalk cafes that lure in tourists with delicious scents of their specialties. Live music and hopping bars are the perfect pairings to watch the sunset into the Gulf of Mexico.
This fluffy rice topped with homemade bright mango salsa and then finished with sauteed shrimp that has been marinated in a tasty soy sauce combination makes me think of some of the awesome dishes I enjoyed while vacationing in Key West, this past summer. It is deeeeelicious!
While Key West has seafood unlike anywhere in the world, they also have plenty of awesome activities to keep you busy. Snuba diving is one of the funnest most unique things I’ve ever done. Key West is one of just a few places in America that offers Snuba diving. It’s kind of a cross between snorkeling and scuba diving. Look it up, it’s really neat.
I will definitely be visiting Key West again in the very near future. I have to get me another taste of that Key Lime Pie. Oh and the Key Lime Ice Cream… melt in your mouth delicious. If you’re looking to have the best trip ever, this spring break or summer, Key West is your place!
Key West Shrimp Bowls with Mango Salsa
Ingredients
For the shrimp:
- 1 1/2 tablespoons coconut aminos or soy sauce
- 1 tablespoon raw organic honey
- 1/2 tablespoon olive oil
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ginger
- 1 tablespoon Sriracha sauce, Tabasco or other variety of hot sauce would work
- 1 lb. medium-sized uncooked shrimp, deveined with tails off*
For the mango salsa:
- 1 mango, peeled and diced**
- 1 vine-ripened tomato, sliced and diced
- 1/3 cup diced red onion
- 1 tablespoon key lime juice
- 1/3 cup roughly chopped cilantro
For each shrimp bowl
- 1 cup cooked rice, quinoa or a combination of the two
- 1/2 of the prepared mango salsa
- 1/2 of the prepared shrimp
- 1/4 large Hass avocado
Instructions
- Combine all shrimp marinade ingredients in a small bowl, pour into a large ziplock baggie along with shrimp. Allow shrimp to sit in marinade for about 30 minutes.
- Heat about 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp to skillet and cook for about 5 minutes and until shrimp is heated and pink, flipping and stirring frequently.
- Combine all ingredients for mango salsa and season with salt and pepper as desired.
- To create the bowl, evenly divide and serve rice/quinoa, shrimp, mango salsa and avocado.
