Wholesome and delicious Easy Pesto Shrimp Tortellini Salad made simply with basil pesto, tasty tortellini, juicy tomatoes and quick-cooking shrimp. Just 4 main ingredients in only 20 minutes – the perfect quick + easy dinner!

To make this meal extra speedy and convenient, I used Buitoni tortellini and pesto. This was a VERY delicious choice!

Easy Pesto Shrimp Tortellini Salad
Ingredients
- 1 pound raw shrimp, peeled and deveined (thawed and patted dry if frozen)
- 1 tablespoon olive oil
- Pinch of garlic salt, oregano, paprika and pepper
- 20 oz refrigerated cheese tortellini (I used Buitoni)
- 7 oz refrigerated basil pesto (I used Buitoni Basil Pesto Sauce)
- 2 cups halved or quartered grape tomatoes
- fresh parsley for garnish, if desired
Instructions
- In a medium bowl, toss together the shrimp, olive oil, garlic salt , oregano, paprika and pepper; to coat evenly. Marinate for 10 minutes or up to 8 hours.
- Meanwhile, cook tortellini according to package directions.
- Once tortellini is done or close to done, heat a large skillet over medium heat until thoroughly heated. Add the marinated shrimp and cook, tossing occasionally for 4 to 5 minutes (about 2 mins on each side) or until cooked through.
- Transfer cooked tortellini, shrimp, pesto and tomatoes to a large serving bowl and garnish with parsley, if desired. Enjoy!

I love a pasta salad like no one else. Having tortellini is even better because I love those extra pockets of cheese and stuffing that you just can’t get with regular pasta. I haven’t tried mine with shrimp but I can’t wait to try it! So fresh and yummy looking!

I add tomatoes to just about any pasta recipe I make, especially if it is with pesto, so I am LOVING this recipe! And I love Buitoni products too. However, I never knew they were clean/no GMOs. This is a big plus in my book. Guess what is coming home with me on my next trip to the store. Haha!

As someone who grew up with fresh seafood right at my fingertips, you would think that I still eat a lot of seafood, but that’s not the case. Now, I tend to stay away from it, because I grew so tired of it living near the ocean. But, this dish has me craving it. Wow – and as a newly converted pesto lover, double whammy!
