I’m so excited to share this quick and easy lettuce wrap meal with you guys! Cooked chicken and a few other ingredients are tossed in an incredible Soy Vay Veri Veri Teriyaki Marinade and make for a great weeknight meal option that’s full of flavor!
There’s something about that perfect sweet + salty combination that is completely addictive. The flavors will rock your world. Lime juice, Soy Vay Veri Veri Teriyaki Marinade, crunchy peanuts, and crisp lettuce – oiyyyy! It’s all so darn good!
The Soy Vay Veri Veri Teriyaki Marinade is a new to me product that I found while shopping in the oriental grocery aisle at Target. I’m loving it on everything from fish to chicken!
These Teriyaki Chicken Lettuce Wraps are relatively low carb and you can go to town with whatever toppings your heart desires. I’m a big fan of textures, so adding in some chopped peanuts for a crunch was a must! Mixing the Soy Vay Veri Veri Teriyaki Marinade in with the chicken allows for an extra flavor pump! Best of all, this meal can be made in 20-30 minutes depending on how quickly you can chop your veggies and is a perfect light and refreshing recipe. Whoop whoop!

Teriyaki Chicken Lettuce Wraps
Ingredients
Wraps:
- 2 teaspoons olive oil
- 1 red or orange bell pepper, diced
- 2 cups cubed or shredded cooked chicken breast, rotisserie chicken works
- 3 green onions, chopped
- 1 cup halved and thinly sliced red onions
- 2 tablespoons Soy Vay Veri Veri Teriyaki Marinade + more to taste
- 1 heart of romaine lettuce or 1 head Boston bibb lettuce
Garnish:
- 2-4 tablespoons chopped peanuts
- slivered purple cabbage and/or carrots
- red pepper flakes
- sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced bell pepper and cook for 2 minutes, or until tender. Add chicken and green onions and continue to cook for 2 minutes.
- Remove from heat and stir in red onions and Soy Vay Veri Veri Teriyaki Marinade.
- To serve, spoon about 1/4 cup of the filling into a lettuce leaf. Add garnish and enjoy!
