Seared Salmon With Watermelon Tomato Avocado Salsa

Seafood has become a staple in our household and I’m especially smitten with salmon – make that Alaska salmon. Not only is Alaska salmon so delicious and quick to cook up, but it’s also loaded with nutritional benefits, including an abundance of omega-3 essential fatty acids, quality protein and fat soluble vitamins A and D and trace minerals including iodine, selenium, zinc and magnesium.
Whether I’m at my local grocery store or eating out, I’m sure to ask for Alaska salmon. With Alaska salmon, I know that it will be wild-caught, natural, sustainable and of the highest quality. Wild-caught Alaska salmon includes five species that can be found at the seafood counter or freezer case including king, sockeye, coho, keta and pink.

Seared Salmon With Watermelon Tomato Avocado Salsa
Ingredients
Watermelon Tomato Avocado Salsa
- 1 large avocado, peeled, seeded and diced
- 1 1/2 cups tomatoes, diced
- 1 1/2 cups watermelon, diced
- 1/4 red onion, diced
- 1 small jalapeno, seeded and diced
- 1/4 cup fresh cilantro, chopped
Salmon
- 1 tablespoon avocado or olive oil
- 4 6-oz. wild Alaska salmon fillets, about 1 in. thick
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
Watermelon Tomato Avocado Salsa
- Combine all ingredients in a medium to large serving bowl.
Salmon
- Preheat oven to 500 degrees F. Line a rimmed baking sheet with foil.
- Heat 1 tablespoon oil in a large skillet over high heat. Sprinkle salmon with salt and pepper.
- Add fillets to pan (flesh side down) and cook for 4 mins (on one side).
- Transfer fillets to baking sheet seared side up and bake at 500 degrees F. for 4 mins or until desired level of doneness.
- Plate cooked fish on a bed of greens and top with Watermelon Tomato Avocado Salsa. Enjoy!
