Real Simple and Peanut Butter Protein Soft Serve Ice Cream

I’m such a magazine junkie!! Some of my favorites are Real Simple and Southern Living for cooking and DIY inspiration and PEOPLE for the fun stories. Whenever I have a little quiet time, there’s nothing better than snuggling up with a magazine and a bowl full of ice cream.
When I was completing my weekly grocery haul at Kroger, I happened to catch a glimpse of the latest issue of Real Simple. The cover drew me in – so fresh and summery. Plus, I couldn’t resist the articles mentioned, like exercises that work, summer treats and cleaning the rooms of your house in less time. I can always use advice on cleaning.
I waited until the kids and hubby were out of the house and then went to town in the kitchen. Luckily, this recipe literally takes less than 5 minutes… because who wants to spend all of their “me time” in the kitchen.
To get started on this easy soft serve recipe, you’ll need to simply blend up a concoction of your favorite protein powder, milk product (I used unsweetened vanilla cashew milk, xanthan gum, peanut butter and ice). Transfer your ice cream to a bowl and add on as many toppings as your little heart desires.
This peanut butter Protein Soft Serve Ice Cream is kind of amazing! It’s:
Creamy
Light
Peanut buttery
Fluffy
Perfectly Sweet
& Seriously simple
Plus, it’s extremely customizable! Though I’ve yet to try other flavors, I can only assume that the base would work well with cocoa powder, different flavored protein powders, fresh fruit, and nuts or seeds! Oh man, the possibilities are endless. I can’t wait to experiment.
As summer winds down, it is important to keep your mind sharp and creative. My favorite pastime that allows me to accomplish this is combining eating ice cream and reading Real Simple.

Peanut Butter Protein Soft Serve Ice Cream
Ingredients
- 1 scoop of your favorite protein powder
- 1 cup of unsweetened vanilla cashew milk, or dairy of your preference
- 1 teaspoon xanthan gum*
- 2 teaspoons all natural peanut butter (or other favorite nut/seed butter), ~12g
- 1 cup of ice
- Stevia or other sweetener, optional
Instructions
- Combine ingredients in blender, beginning with the ice on the bottom.
- Blend until smooth. It should the texture similar to soft serve ice cream or a little thicker.
- Pour out into a bowl and top with your favorite toppings!

Love this simple recipe but too much xantham gum. It was a bit glooey. Next time I’m going to do half a tsp.

My blender can’t really crush ice cubes (or at least it shouldn’t). Can i just substitute it cold water? Any experiences with that?
Without ice, I don’t think that this smoothie will have the right consistency, but you could definitely give it a try.

Peanut Butter and Ice Cream is a prefect match. I get it from time to time as frozen yogurt. With a little bit of fudge and cashews.
