Raspberry Cocktails and Raspberry Cookie Bites

Easy, 6-ingredient no bake raspberry cookie bites with a perfect sweet-tart flavor and a delicious crispy crunch! Pair these with raspberry cocktails made with Chambord Spritzes for the ultimate girls’ night treat!
These cookie bites are made with 6 simple ingredients in less than 20 minutes! No need to spend a bunch of time in the kitchen – fix you and the girls some raspberry cocktails and have a fun girls’ night in!
And even easier are the raspberry cocktails! Chambord Liqueur combined with a little dry white whine and soda water… yes, please!
Chambord is beyond amazing! To make it so irresistible, the freshest blackberries and raspberries are chosen. Then the juices are squeezed, soaked in French spirits and left to mingle for four weeks. Tick tock. More French spirits are added. More tick tocking. After two weeks the infusion has infused. Bravo. Next, the fruit is pressed. The natural juices and sugars are captured. And bon. We have a delicious, sweet base as velvety as a velvet cushion. Come to mama!!
Now the velvety base is blended with extracts of juicy black raspberry and blackcurrants. Fine French cognac, sweet Madagascan vanilla and fragrant herbs are added and they are all left to mingle. This is where Chambord develops its character. Bonjour Chambord.
This could not be a more incredible flavor combo! Plus, sweets and cocktails are essential when the girls are over for a fun night!

These bites make the perfect snack or a healthier dessert. I love having two (or three) in the afternoon for a little energy boost alongside a cup of coffee. But even better is enjoying them with the girls, paired with Chambord and some glorious raspberry cocktails! They would also make a great topper for Overnight Oats, Cauli-Berry Smoothie Bowls, or Fluffy Gluten-Free Yogurt Pancakes!

No Bake Raspberry Cookie Bites
Ingredients
- 1/2 heaping cup freeze dried raspberries, strawberries work too
- 1 1/4 cup cocoa crispies cereal, gluten-free, as needed
- 2/3 cup vanilla protein powder
- 1/3 cup no stir nut butter of choice
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla
- optional cocoa powder, powdered sugar, or more raspberry powder for dusting
For the Chambord Spritz:
- 1 1/2 oz. Chambord Liqueur
- 4 oz. dry white wine
- Soda water
Instructions
- Use a blender or food processor to grind up freeze dried raspberries and transfer into a mixing bowl.
- To the ground raspberries, add protein powder (or coconut flour), crisp cereal, nut butter, honey and vanilla. Stir ingredients all together.
- Use slightly damp hands to roll into 1-1.5 inch balls and place on a plate. Dust with additional raspberry powder from the freeze dried raspberries, cocoa powder or powdered sugar, if desired.
- Let bites freeze for 20-30 minutes then transfer into a baggie.
- Keep in fridge or freezer for up to 6 weeks.
For the Chambord Spritz:
- Take a large wine glass and fill it up with ice. Add Chambord, white wine and soda water.
