Avocado toast with egg can seriously satisfy every craving imaginable. The toasty bread and the smooth and creamy avocado mash-up is just so yummy. But to take this recipe to the next level of deliciousness, while adding protein and nutrients, we’re topping it off with an egg and other tasty garnishes.

I’m sharing my technique for fried eggs, scrambled eggs, boiled eggs and poached eggs to top your avocado toast! You’ll have a well-rounded meal that includes carbs from a slice of bread, plenty of protein from the eggs and healthy fats from the yolk and avocado.

Ingredients needed

There’s so many options when it comes to making this avocado toast with egg recipe! Choose how you want your egg cooked, what kind of bread you like best and any extra toppings you might want to add. Here is everything you’ll need and a note on all of the ingredients:

  • Eggs: For one slice of avocado toast, I like to use two large eggs.
  • White vinegar: If making poached eggs, this will help the eggs stay together in the water.
  • Ripe avocado: Use an avocado that is slightly soft, perfectly ripe and ready to be cut and sliced or mashed.
  • Bread: My favorite bread is Dave’s Killer Bread. Use whole-wheat bread or bread of choice, a thick, crusty bread will work best. Use gluten free bread as desired.
  • Kosher salt and black pepper: You’ll definitely want to generously salt and pepper the avocado and egg to bring out the flavor.

Substitutions & Variations

Mix and match ingredients, so your avocado toast turns out just the way you love it! Here are some ideas of ways to change it up:

  • Grains: Some good bread options that are thick and crunchy: sourdough, five grain bread, multigrain, rye or whole wheat bread works well.
  • Vegetables: My favorite is pickled red onions! Sliced tomatoes or cherry tomatoes, sliced radish, cucumbers are all fresh, delicious choices.
  • Spice: If you like spicy food, add some pico de Gallo, hot sauce, salsa a sprinkle of paprika, red pepper flakes, sliced or chopped jalapeños or cayenne pepper to the avocado mixture.
  • Protein: Increase the protein with slices of smoked salmon, ham or bacon.
  • Cheese: A sprinkle of feta cheese or parmesan cheese add contrasting sharp flavor.
  • Leafy herbs: Fresh basil, cilantro, dill or parsley bring in freshness.
  • Seasoning: Sprinkle everything bagel seasoning over the top for seedy deliciousness.

How to make this recipe

Fried egg: Spray cooking spray in a nonstick pan over medium heat. Gently crack the eggs into the skillet. Cook until the egg sets and the yolk is cooked to your liking.

Scrambled eggs: Whisk eggs in a small bowl with a fork and season with salt and pepper to taste. Heat a small nonstick pan over medium heat, when hot spray with oil and pour the egg into the skillet. When the edges start to set, gently begin folding and stirring the eggs until cooked through, about 2-3 minutes.

Hard boiled eggs: Bring a small saucepan of water to a boil, then gently lower the eggs into the water. Lower the heat so that the water is at a gentle simmer. You don’t want a full rolling boil, just a gentle amount of bubbles. Cook for 13 minutes. When the eggs are finished cooking, gently drop them into an ice bath for 5 minutes. To peel, gently give them several taps against the countertop, all over. Then, peel and enjoy.

Poached eggs: Bring a medium pot of water to a boil. Crack one egg into a small bowl. Stir vinegar into the water and create a vortex with the boiling water. Lower the heat so the water creates a rolling boil at the bottom of the pot. Then, carefully add the egg to the middle of the pot and cook for 3-4 minutes, according to desired doneness. Remove the egg with a slotted spoon.

Mash the avocado: In a shallow bowl or plate, mash the avocado with a fork and salt and pepper.

Toast bread: Toast the bread in the toaster or lightly brush with softened butter and toast in a pan over medium-high heat. For large crowds, toast in the oven at 400ºF for 8-10 minutes.

Start assembly: Spread a generous amount of the avocado mixture over each toast.

  • Serving size: The serving size is one slice of toast with two eggs and about 1/4 of a small avocado. Feel free to scale this recipe to fit your needs.
  • Ripe avocado: When choosing a perfectly ripe avocado, remove the stem and if it’s green underneath, the avocado is ready to eat. If it’s brown, the avocado is overripe. It should be firm with just a slight amount of give when pressed.
  • Avocado: When mashing, you can leave it as chunky or as smooth as you’d like. You could also just add slices of avocado instead of mashing.
  • Egg white: To reduce the fat in this meal, scramble egg whites without the yolk. Or use hard-boiled eggs with the yolks removed.

Avocado toast is made with just mashed avocado spread on toast. Guacamole toast is toast spread with guacamole, which is made from mashed avocado that includes add-ins such as onion, garlic, cilantro, and lime juice or lemon juice.

  • Serve immediately: After spreading the avocado over the bread, you’ll want to eat your toast right away. After some time, the avocado will make the bread soggy.
  • Making it ahead of time: If you’d like to mix up the avocado ahead of time, drizzle a bit of lime or lemon juice over the top to help slow down the browning process. When ready to spread, stir together the lemon juice and avocado mixture.
