I love that my picky kids gladly gobble up a stack of these whole grain, preservative free pancakes. It’s also super helpful that these are easy enough to whip up before school even on the most hectic of mornings.
How fabulous that you can simply use water and the Kodiak Cakes mix to make a tasty pancake or you can add a couple of ingredients to really pack in the protein.
Just using the mix and water alone, will give you 14 grams of protein per serving (3, 4″ pancakes). I like to increase this to about 20 grams of protein by adding in one egg per serving. I also think it makes for a richer even more delicious pancake!
The day we received this mix in the mail, Brad made them for dinner and they were so amazing he had them for dinner again the next night. He likes to add blueberries and slices of banana to the batter before cooking and then tops his stack off with a spoonful of almond butter. I enjoyed mine topped off with zero calorie pancake syrup, fresh blueberries and a sprinkling of unsweetened shredded coconut.

How to POWER UP your Almond Poppy Seed Power Cakes:
- Replace water with milk
- Replace water with egg whites
- Add an egg or two
- Replace water with milk or egg whites AND add an egg or two
Almond Poppy Seed Power Cakes
Ingredients
- 1 cup Kodiak Cakes Mix
- 1 cup water or your preferred milk product*
- 1-2 eggs (optional)
Instructions
- Stir all ingredients together until combined. Don't over-beat.
- Pour 1/4 cup batter onto a heated and greased pan or griddle. Cook on medium-high heat or 375 degrees F. until bubbles form on the top. Flip and continue to cook until golden brown.

Best pancakes ever!!! I did the same thing as your husband when I had these pancakes the first time— they were so delicious I made them again the next day! I literally could t stop thinking about them. I rarely get excited enough about a food product to text people about it, but I was sending recommendations to all of my family members for these pancakes. They are absolutely amazing and the best pancakes I’ve ever had.
We like them with blueberries also, or an extra treat just butter and blueberry syrup. :). I will try adding an egg, though I don’t know how they could be better!
