Easy Strawberry Banana Baked Oatmeal
This super Easy Strawberry Banana Baked Oatmeal is so delicious; studded with fresh strawberries, banana slices and sweet chocolate chips. It’s one of our favorites and is sure to become one of yours too!
I seriously love this recipe so much because not only is it wonderfully tasty, you can make it the morning of with very little hands-on time or prepare it the night before and bake it in the morning. It also works great as a meal prep idea for quick breakfasts throughout the week.
It’s really flexible, too. Feel free to experiment with the add-ins to this recipe. I’m a huge fan of the strawberries, banana and chocolate, but add your favorites. You can even throw in nuts, raisins or cranberries. The possibilities are endless!
This Easy Strawberry Banana Baked Oatmeal is really simple to whip up! Just mix all of the dry ingredients and transfer to your casserole dish.
Mix the wet ingredients in a large mixing bowl and pour that mixture over the oatmeal mixture.
Bake & serve! Yum-o!
Baked oatmeal is perfect when serving a crowd for breakfast. You can bake this the night before and reheat in the morning for an easy and impressive breakfast. This meal is kid-friendly too! My picky kids gobbled it up. I do think the chocolate chips helped. ?

TIPS FOR THE BEST EASY STRAWBERRY BANANA BAKED OATMEAL:
- If you’re in a crunch for time, you can mix all of the ingredients the night before cooking and then bake in the morning. If you do this, place bananas on the bottom of the dish and not on top of the oats since they may brown slightly overnight.
- You can totally freeze the oatmeal! After mixing everything together, tightly cover the oatmeal or pour into resealable plastic bags and freeze for up to one month. Then, when you want to bake the oatmeal, just remove from freezer, thaw and bake as directed. If you decide to do this, I suggest that you mix the fruit into the oatmeal instead of placing on top to prevent browning – especially the bananas.
RECIPE SUBSTITUTIONS:
- This baked oatmeal recipe is easily adapted for dairy-free and egg-free diets. While the ingredient list includes one egg in the recipe, this recipe works well removing the egg completely. Another easy substitution is using soy, almond, cashew or even coconut milk for the milk called for in the recipe.
- You can, of course, change the fruit and chocolate in the recipe, too. To reduce calories or level of sweetness, eliminate chocolate from the recipe all together. You could also substitute blueberries, blackberries or other fruit for the strawberries and banana.
- If you wish to reduce the amount of sugar, try eliminating the sugar all together. You could do this or replace the sugar with honey, maple syrup or agave nectar. I’ve also had great success replacing the sugar with 4 stevia packets.
Easy Strawberry Banana Baked Oatmeal
Ingredients
- 2 cups old fashioned rolled oats*
- 1/3 cup sweetener that measures like sugar**
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 6 ounces strawberries, sliced
- 1/4 cup mini chocolate chips***
- 1 1/2 cups milk, dairy or non-dairy
- 1/2 cup orange juice or additional milk
- 1 large egg
- 2 teaspoons vanilla extract
- 1 ripe banana, peeled and cut into 1/2-inch slices
Instructions
- Heat oven to 375 degrees F. Generously spray the inside of a 2-quart baking dish with cooking spray and set aside.
- In a large bowl, mix together the oats, sweetener, baking powder, cinnamon, salt, half the strawberries, and half the chocolate chips. Add to prepared baking dish. Scatter the remaining strawberries, chocolate, and the banana on top of the oats.
- In another large bowl, whisk together the milk, egg, and vanilla extract, then pour over the oats and fruit. Gently shake the baking dish to help the milk mixture cover the oats throughout the dish.
- Bake oatmeal until the top is golden brown and the milk mixture has set, about 35 minutes.

Kim, This is a first time commenting. I have used several of the recipes and love the outcome each time. I have a question regarding the oats. Can steel oats be used in place of rolled oats? Steel Oats are pretty much the only ones I use. Thank you
Thanks so much for commenting! I have not personally tried using steel cut oats when baking oatmeal, but based on what I’ve seen on other sites, you probably will just need to increase baking time by about 20-25 minutes. Good luck and let me know if you give it a try!

Kim, I’m new to your site, but your recipes look great. The thing is, I get very ill when I use sugar substitutes, they don’t agree with my body at all. Do I just use sugar in the amount you show for the sugar free ingredient? If so, will this be way too high in calories? Thanks for your feedback, I appreciate it.
Thanks so much for your kind words! You can definitely use the amount with regular sugar. However, for a recipe like this one that uses sweet fruit like the ripe banana and chocolate chips, I really think this will be sweet enough and you can leave out the sugar all together.
