Ingredients you’ll need
The ingredient list for this baked brie recipe is short and sweet! It only requires 5 simple items and then whatever accompaniments you’d like for serving. Here’s what you’ll need:
Scroll down to the recipe card for exact measurements.
- Puff pastry: Light, flaky, and buttery dough that forms the perfect golden crust around the Brie.
- Brie cheese: Soft, creamy cheese that melts beautifully, providing a rich and smooth texture. Camembert cheese would also work. It’s similar to brie but offers a slightly stronger flavor but melts wonderfully.
- Toasted almonds: Adds a crunchy, nutty flavor that complements the smooth Brie and sweet preserves.
- Raspberry preserves: Sweet and tart, raspberry jam or preserves add a burst of fruity flavor that pairs perfectly with the other ingredients.
- Egg: A beaten egg is brushed over the puff pastry, giving it a golden, glossy finish when baked.
- For serving: I like to serve this with various dippers like crackers, toasted baguette and/or apple slices. Perfect for scooping up the gooey cheese!
Substitutions and variations
Preserve variations:
- Fig jam: A rich, sweet fig jam pairs wonderfully with Brie, offering a more savory flavor profile.
- Apricot or peach preserves: These provide a different fruity sweetness, balancing out the richness of the cheese.
- Honey: Drizzle honey over the cheese instead of or in addition to using preserves.
Nuts and toppings:
- Pecans or walnuts: Instead of almonds, try pecans, pistachios or walnuts for a different nutty flavor.
- Cranberries: For a more festive touch, add dried cranberries or a cranberry chutney for a tart contrast to the creamy Brie.
Serving options:
- Breadsticks or crostini: Instead of crackers, serve with breadsticks or crostini for a more rustic presentation.
- Vegetables: Serve with sliced vegetables like cucumbers or carrots for a fresh crunch alongside the warm cheese.
- Other extras: I like to serve baked Brie on a large serving platter or cheese board with the following, to make a pretty presentation: crackers, crostini, pita chips, apple slices, grapes, nuts and fresh herbs. You can also include charcuterie board items like meats and cheeses.
How to make this recipe
Get ready to dip into the most delicious cheesy appetizer! This Baked Brie is warm, creamy and comforting. Plus, it’s so easy to make! Here’s the simple process:
Step 1: Preheat oven to 425ºF. and line a baking sheet with parchment paper, or bake in a greased pie plate. Place the thawed puff pastry sheet on the prepared baking sheet.
Step 2: Place an 8-12 ounce wheel of brie in the middle of the puff pastry (leave rind on). Spread preserves on top of cheese.
Step 3: Sprinkle almonds on top of preserves. Begin folding the corners over the brie.
Step 4: Once all the corners are folded, it’s like a package. Gently press the edges against the brie and neaten up the sides.
Step 5: Brush the pastry all over with 1 beaten egg. Be sure to get the sides and around the folds. Try not to let the egg puddle under the brie. Bake for 20-25 minutes.
Step 6: Remove from oven and let cool for five to ten minutes. Use the parchment to transfer to a serving tray or if using a pie plate, serve straight in that. Enjoy with your favorite crackers, sliced baguette and apple slices, if desired.
Helpful tips
Here are some helpful tips for making the perfect Baked Brie in puff pastry!
- Keep the puff pastry cold: Puff pastry works best when it’s cold, so make sure it’s well-chilled before you wrap it around the cheese. This helps it puff up beautifully while baking.
- Use a round brie: A round brie will fit perfectly inside the puff pastry and maintain its shape as it bakes. You can use a square brie, but the round shape gives it a more classic look.
- Brush with egg wash: For a golden, glossy finish, brush the puff pastry with a beaten egg before baking. It adds a beautiful color and extra crispiness to the crust.
- Serve warm: For the best experience, serve your Baked Brie warm right out of the oven with an assortment of dippers.
Frequently asked questions
Yes, the rind is edible and helps the cheese hold its shape as it bakes. If you prefer, you can remove it with a sharp knife, but the Brie will be softer and more challenging to handle.
Yes, you can assemble the Baked Brie in advance and store it in the refrigerator until ready to bake. Just make sure to wrap it well to keep the pastry from drying out. Brush with egg wash just before baking.
I haven’t tried this, but I think it would work fine. But the texture will be lighter and crispier. Layer several sheets of phyllo dough, brushing each with butter, to create a similar effect.
Storing leftovers
Baked brie tastes and looks best right after it’s been baked, but you can store and reheat leftovers. Transfer to an airtight container or wrap tightly in plastic wrap, and store in the refrigerator for up to 3 days. Reheat in the oven at a low temperature of 200ºF to maintain its flaky texture.

Notes

HUGE HIT! Made twice already, with apricot preserves and dried cranberries, it’s so easy to make and delicious, also used the egg wash, came out crispy and golden.
Have made this several times, everyone always loves it.
This recipe for baked brie was delish! I loved it and will be making it again! Bookmarked for future use.
This was absolutely amazing, especially with the rosemary crackers I served with it. I omitted the almonds and used raspberry preserves. I recommend waiting 10 min before cutting into it or else it will spill out all over. This was the last thing out of the oven at a potluck and still the first thing to go!
This was awesome with pepper jelly!
This was delicious and absolutely beautiful!
I have never served warm brie in puff pastry before and decided to try this for Christmas Eve. Delicious!! Everyone loved it! The flavor combination is fantastic. No leftovers!
We made this for our boxing day dinner, and it was a huge hit. I always love a good brie recipe, but even the kids who don’t usually like soft cheeses enjoyed it. Perfect!
Absolutely love this recipe. Instead of brie i used a small round camambert. I also served it with carrot and peper sticks along with rosemary crackers. It was absolutely delicious.
This is one of my favorite go to appetizers when I need something yummy but also quick and easy. Everyone always loves it!
