Some schools have already started back and my kids go back to school in just a couple of weeks. School supply gathering, new clothes shopping and meal planning has already taken over. Meal planning revolves around easy lunches and quick dinners- all nutritious and kid-friendly as possible.
Landen will be in the 9th grade this year and Madelyn 4th grade. YIKES! Landen thinks he’s too old to bring his own lunch, but Madelyn brings hers every SINGLE day. That’s great because I get to control what she takes, but some days I’m just so exhausted. I mean, really, what kid doesn’t want pizza for lunch?!?!
She prefers an almond butter and jelly sandwich on Sara Lee® whole grain white bread. Every now and then I can even get her to take a tuna or egg salad sandwich. BLT Egg Salad
Ingredients
- 2 pieces nitrate-free turkey bacon, cooked and chopped (I use Applegate brand.)
- 2 Roma tomatoes, finely chopped
- 1 cup chopped romaine lettuce
- 3 tablespoons plain non-fat Greek yogurt
- 1 tablespoon mayo, use a mayo product that's just mayo or use another tablespoon Greek yogurt
- 1/8 teaspoon pepper
- 1/4 teaspoon sea salt
- 6 large hard-boiled eggs, peeled & chopped
- bread or lettuce wraps, for serving
Instructions
- Stir together all ingredients in medium bowl until well combined.
- Serve on greens, crackers, sandwich bread, wrap-style or in cabbage or lettuce wraps. Enjoy!

Honestly, I think you’ll enjoy the egg salad without the bacon. I also have a skinny egg salad and curry egg salad (on the blog) that are delicious and vegetarian. Good luck!
