Chipotle’s guacamole recipe is SO good, but it’s actually not that different from your average guac recipe. A couple of years ago, Chipotle Mexican Grill released their treasured guacamole recipe. I was super excited to see this because, as you probably know, you have to pay extra for the guac and it’s not cheap, but oh so worth it.

It is seriously the most amazing homemade guacamole! It’s so simple, yet so perfect. The creamy, mild avocado and the bite of the red onion and tangy lime juice are balanced so well by the warm jalapeños. One taste and you’ll be hooked. This crowd-pleasing dip is such a hit, it disappears quickly!

Ingredients needed

Chipotle’s guacamole recipe includes all of the simple ingredients that you would typically use in any other guacamole dip. I used all of the same ingredients that Chipotle does, but changed the measurements slightly. Here are the ingredients you’ll need:

Avocados with bowls of minced cilantro, jalapeños and red onion.
  • Avocados: If you can find ripe Hass avocados, those are best and the ones that Chipotle uses. They are higher in fat than other varieties, which gives them a richer taste and smoother, creamier texture.
  • Jalapeño: I like to use just a half of one seeded jalapeño, which will not add much heat. For more heat, leave in some of the seeds and add in a bit more minced jalapeño.
  • Red onion: Adds sharpness to contrast the mild flavor of the avocado.
  • Fresh cilantro: Finely minced to easily add herby flavor throughout the mixture.
  • Lime juice: Fresh lime juice is best for the perfect citrus flavor. It will also keep the avocados from turning brown.
  • Salt: Start with 1 teaspoon, then taste and add more to bring all of the flavors together.

Variations and substitutions

  • Onion: Chipotle’s recipe calls for red onion, which has an assertive and slightly spicy flavor. Feel free to replace it with a white onion or yellow onion.
  • Cilantro: If you don’t care for cilantro, simply omit it.
  • Fresh garlic: If you like the flavor of garlic in your guacamole, add about 1 clove minced garlic.
  • Add seasonings: Add more seasonings and spices for a different flavor. Any of the following would be amazing: paprika, ground cumin, garlic powder, and/or black pepper.
  • Add pico: Serve with pico de gallo for dipping or mix them together for a new dip!

How to make this recipe

Chipotle’s guacamole recipe could not be easier! Start by mashing the avocado and finely chopping the other vegetables. Then, combine everything and taste! Here’s how it all comes together:

Step 1: Cut the avocados in half (vertically) and remove the pit by stabbing carefully with your knife. Use a paper towel or dish towel (so the pit is not slippery in your hands) to remove the pit from the knife.

Step 2: Scoop the avocados out of peel and place on a plate or in a medium bowl. Use a fork or potato masher to mash avocados until a smooth consistency is achieved. Add remaining ingredients.

Step 3: Stir all of the ingredients together. Take a taste or a few tastes and adjust seasoning as needed for yumminess!

Helpful tips

  • Choosing an avocado: For the best flavor, be sure to choose avocados that are ripe, but firm. You don’t want them overly soft and mushy.
  • Taking the bite out of onion: If you’re sensitive to raw onion flavor, run it under hot water to remove any bite from the onion before combining it with the other ingredients.
  • Add citrus juice: You’ll definitely want to add either some lime juice or lemon juice because this will not only add flavor but also prevent browning. For every avocado, use about 1-2 teaspoons lime juice.

  • Cover the container with a lid, and store it in the refrigerator. 
  • When you’re ready to enjoy the guacamole, drain the water off the top, give it a stir and dig in!
