Chocolate Chip Pancake Poppers
Are you head-over-heels for pancakes, but prefer an easier, less hands on, portable breakfast? These scrumptious chocolate chip pancake poppers are the perfect breakfast treat!

Consider yourself warned, though… once you start popping, you just can’t stop! You guys know how picky my little hand model is… yes, even picky about pancakes. Well, she devoured them and still hasn’t stopped asking when I’m going to be baking them again. The recipe makes 18 poppers, so there were plenty leftover and they made a great sweet treat with my evening coffee.
It’s no secret that Kodiak Cake mix is my go-to, if I’m not making homemade pancakes or waffles. So, I’m over-the-moon to be partnering with them on a regular basis to create recipes and posts on their blog. I’m pretty sure you could use another variety of pancake mix, if you don’t have Kodiak Cake mix on hand, but I’m not really sure because I’ve only tried the poppers using Kodiak Cake mix. You can find Kodiak Cake Mix online, at Target and other locations as well.
Chocolate Chip Pancake Poppers
Ingredients
- 1 1/2 cups of Kodiak Pancake Mix
- 3/4 cup of water
- 3 tablespoons of egg beaters or egg whites
- 2 tablespoons of mini chocolate chips
- Cooking spray
- Maple syrup for serving
Instructions
- Preheat oven to 400 degrees F. Spray mini muffin pan with cooking spray and set aside.
- In a bowl, combine the pancake mix, water, egg whites, and mini chocolate chips. If the batter looks thick add some more water to it.
- Pour the batter into mini muffin tins and bake for 8 to 10 minutes.
- Serve with sugar free maple syrup.
