Copycat Starbucks Egg Salad Sandwich- If you’ve ever tried Starbucks Egg Salad Sandwich, you know Starbucks serves a simple, yet tasty, classic egg salad on wheat bread with arugula leaves. Are you a fan of the Starbucks egg salad? You’re so going to love my healthier, just as scrumptious version!
Starbucks Egg Salad Sandwich is quite wonderful, but it’s also quite pricey. There is just no reason an egg salad sandwich should cost 7 bucks. Plus, in my version we have Greek yogurt rather than mayo. Using Greek yogurt, ups the protein and cuts down on the calories. Win-win!
Egg salad is one of those things people feel pretty strongly about. Personally, I think my Curried Egg Salad is the best ever. Throw in anything other than eggs, mayo and maybe celery and look out. Not everyone’s excited about Greek yogurt and that’s okay. Use mayo, instead, if you prefer. I will tell you, chopped bacon stirred in your egg salad is beyond amazing. Don’t believe me? Use the measurements as a guide. Many times when I make salad recipes I don’t measure ingredients. If your mixture isn’t creamy enough, add another dollop of Greek yogurt. And, of course, you can always add in extra ingredients to kick it up a notch. I would highly recommend bacon. Nuts, dried fruit or even chunks of apple are also terrific additions.
Copycat Starbucks Egg Salad Sandwich
Ingredients
- 6 hard-boiled eggs, chopped and mashed
- 1/3 cup Greek yogurt + 1-2 tablespoons more for a creamier salad
- 1-2 tablespoons dill relish with some juice
- 1 teaspoon dijon mustard
- 2 tablespoon chives
- For serving- wheat bread and arugula
Instructions
- Stir together all ingredients in medium bowl and serve on wheat bread with arugula.
- Alternatively, try serving with crackers, wrap-style or in cabbage or lettuce wraps. Enjoy!
