Mini Snickerdoodle Muffins
How about a little splurge today? I think it’s time. We’ve been sooooo good since Christmas. It’s fun to go a little crazy sometimes and this is just the muffin to eat when you want to jump off of the bandwagon for a moment! And they’re little, so no worries. You guys know how much I love snickerdoodle everything.

Mini Snickerdoodle Muffins
Ingredients
For the muffin:
- 1 1/2 cups all-purpose flour
- 1/2 cup white sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 egg, lightly beaten
- 1/2 cup Italian Sweet Crème Coffee-mate Creamer, alternatively milk can be used
- 1/3 cup coconut oil or butter, melted (I used coconut oil.)
For the topping:
- 1/4 cup white sugar
- 1/2 teaspoon ground cinnamon
- 1/3 cup coconut oil or butter, melted (I used coconut oil.)
Instructions
- Preheat oven to 350 degrees F. Spray muffin cups with an all-natural cooking spray or line with paper muffin liners.
- In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, cinnamon and salt. Make a well in the center of the mixture.
- In a separate smaller bowl; whisk together egg, creamer (or milk) and 1/3 cup melted coconut oil(or butter).
- Add egg mixture to the well of the flour mixture; stir until just moistened (batter will be thick and may be lumpy).
- Spoon batter into prepared muffin cups.
- Bake in preheated oven for 15-20 minutes for mini muffins and 20-25 minutes for regular-sized muffins.
- Meanwhile, combine 1/4 cup sugar and cinnamon in a shallow bowl. Put melted coconut oil (or butter) in a separate small bowl. When muffins are finished baking and have cooled for about 5 minutes, dip tops of muffins in the melted coconut oil (or butter), and then in the cinnamon sugar mixture.
