Easy One Skillet Pork Tenderloin Medallions with zucchini makes for an easy one pan meal! It’s protein and veggie packed, nourishing, paleo, low carb, and ready in less than 30 minutes. You and your family will love this flavorful pork loin skillet dish, that’s perfect for busy weeknights!
Now that it’s cooling down, I’m reminded of how much I love the fall, the colors on the trees and the tasty fall vegetables. We love going apple picking and other fun fall activities as well and have been enjoying them recently. Fall also means back to school, though, and so we have been readjusting our schedules. Having some quick and easy meal options to turn to is definitely helpful, and even better one with lots of flavor. This pork skillet is exactly that! It’s a colorful, tasty meal cooked all in one pan, so there’s very little clean-up needed.
One of my favorite ways to enjoy pork tenderloin is to cook it up medallion-style. Pan-seared Smithfield® Marinated Fresh Pork is perfect when sliced and served over salad, roasted potatoes, in a wrap, or as a hearty appetizer on its own. You could cook the tenderloin and then slice it, but then you would miss the crispy seared coating that touches every corner of these gems.
I picked up the Smithfield Roasted Garlic & Herb Loin Filet and everything else for this recipe at Walmart – you’ll find the pork in the meat section. This recipe uses the Roasted Garlic & Herb Loin Filet but you can also try it with the Applewood Smoked Bacon Loin Filet or Smithfield Slow Smoked Mesquite Flavor Loin Filet to mix it up and change up the flavors. Smithfield’s Marinated Fresh Pork is a handy way to get lots of flavor into a quick meal.
These Easy One Skillet Pork Tenderloin Medallions are so easy to make, using just one pan and taking less than half an hour to put together. The result is a delicious family-friendly meal, that’s full of flavor and pretty healthy too. It’s definitely a meal to add to your go-to list for busy nights.

This recipe is great served with a leafy green salad or even atop a bed of quinoa for more protein (see recipe + notes for more options). Easy One Skillet Pork Tenderloin Medallions
Ingredients
- 1 lb Smithfield® Marinated Fresh Pork, sliced 1/3 to 1/2 in thick
- 1 sliced red onion
- 2 oz. sliced black olives
- 1 zucchini, thinly sliced
- Fresh basil for garnish
- Salt/pepper, paprika and red pepper flakes, if desired
- Serve with mixed leafy greens. See notes for other options.
Instructions
- Heat skillet that has been sprayed with cooking spray on medium. Sauté onion first until fragrant.
- Next add pork loin medallions and cook on medium for 5 minutes.
- Flip over pork and add olive and zucchini slices to skillet.
- Cook another 5-7 minutes or until pork is not longer pink.
- Plate your pork and vegetables. Serve w/fresh basil, red pepper flakes, paprika, salt, and pepper, if desired.

It is nice they say things that are already marinated. It just saves that step which can take hours to really get into the meat.
I like giving the kids smaller sized meats like this. If I give them a lot, they automatically complain that they can’t eat it all. If I give them small portions, they tend to eat more. Your dish looks scrumptious.
