Flourless Strawberry Oatmeal Waffles
I cannot express my love for these Flourless Strawberry Oatmeal Waffles enough. Guys, this crispy, crunchy, incredibly delicious breakfast could not be more perfect for your Valentine sweetie.

These are officially my new go-to waffle. They received rave reviews from my family and for good reason. They’re delicious plain, but irresistible with sliced banana, strawberries, pancake syrup and mini chocolate chips. So good!

Flourless Strawberry Oatmeal Waffles
Ingredients
- 1 1/2 cup rolled oats or 1 1/4 cup quick oats, gluten-free as needed
- 1/4 cup cornstarch
- 1 tablespoon coconut palm sugar, granulated sugar will also work
- 1 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 container So Delicious strawberry, vanilla or plain yogurt (about 1/2 cup), 5.3 oz
- 1/4 cup So Delicious unsweetened vanilla almond milk, or other nondairy milk
- 2 large eggs
- 1 tablespoon melted coconut or olive oil
- 1 teaspoon vanilla extract
- 1/2 cup halved strawberries*
- Toppins as desired*
Instructions
- Preheat waffle iron.
- Add all the ingredients to a blender and process on high until smooth.
- Spray waffle iron with cooking spray and pour about 1/2 cup batter per waffle, and depending on size of waffle iron, into waffle iron. Batter will be thick, so smooth out slightly with the back of a spoon. Cook until waffles are crisp and golden brown, repeat with remaining batter.
- Serve waffles warm with your favorite toppings. Waffles can also be stored in the freezer for a quick breakfast option. Just reheat them in the toaster when you're ready to eat.
