Fluffy Yogurt Protein Waffles {gluten-free}

Yogurt is the not-so-secret ingredient that gives these fluffy protein waffles that light, crisp-on-the-outside, soft-on-the-inside quality. Yogurt not only makes for a fabulous taste and texture in waffles and other baked goods, but it also adds plenty of nutrition to this yummy breakfast.
My yogurt of choice in this recipe is Activia, because it’s not just any yogurt. Honestly, I’ve become a bit of a yogurt snob, thanks to my friends at Activia. The creaminess and the flavor – beyond delicious, I tell you! I’m a huge fan of the blueberry and strawberry varieties. I also really love that Activia is a yogurt I can feel good about eating.

Perfect for lazy weekend mornings, try cooking up the waffles ahead of time and freeze a batch for busy weekdays. Super quick and easy to throw together – and the whole family is guaranteed to love them.
Fluffy Yogurt Protein Waffles {gluten-free}
Ingredients
- 1 scoop (about 21-24 grams) protein powder, use gluten-free as needed
- 1/4 cup egg whites from a carton
- 2 tablespoons water + 1-2 tablespoons more, as needed for consistency
- 1/4 cup yogurt (any flavor!)
- fruit, nut/seed butter, maple syrup and/or powdered sugar, for serving
Instructions
- Spray waffle iron with nonstick cooking spray or grease with coconut oil and preheat.
- In a small bowl, stir protein powder egg whites, Activia yogurt and water until mixture is fully combined. Add additional water if needed to gain preferred consistency. You will want the batter to be thick, but able to pour onto waffle iron.
- Pour batter onto the waffle iron. My waffle iron is very large and this recipe will make one large waffle. Depending on the size of your waffle iron, you may need to make in batches.
- Cook on high and according to waffle iron instructions. I like to let my waffle cook a couple extra minutes after the waffle iron indicates the waffle is cooked. This gives the waffle an extra crisp outer texture.
- Serve waffle immediately with desired toppings.
- Try making up a few batches on Sunday, to have a quick breakfast ready to go throughout the week. Waffles freeze well, up to 2 months. Reheat in toaster or microwave.

Is the protein total in the nutrition info correct? It says one scoop of protein (usually 20 something grams), but the nutrition info is 1.5g.
