Pizza night and taco night are two cherished family traditions in the Lee household. They each occur about once weekly, and as much as we love tacos, making homemade pizza is our favorite. The kids usually get in on the action and pile on their favorite toppings.
There are no rules when it comes to toppings and why not combine pizza night and taco night using zesty Mexican-style ingredients?! Load on all the flavorings and vegetables you’d put in your tacos and believe me, your family will be thanking you and there won’t be any leftovers!
Instead of pizza sauce, shake things up with refried beans and then add whatever taco-type toppings you prefer. Our cheese preference was crumbled La Vaquita® Queso Fresco. I love how it adds a Mexican flair to any dish – it’s works so well on taco salad too!
I also find it pretty awesome that La Vaquita started back in 1971, right here in my home state of Texas. As it has grown from being made in small batches in the home of Mexican immigrant, Maria Castro, to being used in chef-crafted culinary creations, La Vaquita continues to define how Hispanic cuisine is enjoyed in Texas.

Gluten-Free Taco Pizza
Ingredients
- 1 Gluten-Free pizza crust mix*
- 15 oz refried beans, (you more than likely will not use the whole can)
- 1 cup chopped green leafy lettuce
- 1-2 ripe tomatoes, chopped
- 1/2 cup Mexican or Southwest-style corn
- Toppings as desired*
Instructions
- Cook crust according to package instructions. Spread refried beans over crust and top with ingredients.
- Bake at about 350 degrees F. for 10 mins or according to crust instructions. Enjoy!
Notes
**Ingredient measurements are only a guide, use as much or as little as you like. Feel free to add cooked shredded chicken or even taco seasoned cooked ground turkey for additional protein. Topping ideas: sliced black olives, chopped fresh cilantro and crumbled La Vaquita® Queso Fresco
