Greek Power Bowls

With the hectic schedule of back-to-school, I crave simple, healthy meals that can be thrown together easily and quickly. A power bowl is a beautiful, nourishing meal that’s easy to make with whatever veggies, grains and other fun ingredients you have on-hand.
Minute® Ready to Serve Rice is one staple that’s always in my pantry. Portable, filling and ready in just 60 seconds; it can conveniently be used along with other ingredients to create an easy meal or eaten straight out of the cup with a little honey and peanut butter for a filling breakfast or snack. I keep one or two in my desk drawer at work and, for lunch, often simply mix it up with a little salsa and grilled chicken for a complete meal, likety-split.
Minute® Ready to Serve Rice is available in several flavorful and wholesome varieties including: all new varieties such as Brown & Quinoa and Basmati Rice, as well as Whole Grain options of Brown Rice, Brown & Wild Rice and Multi-Grain Medley. Also, there’s Jasmine Rice, White Rice and flavorful mixes. Something different for everyone in the family!
Not only are these big salad bowls wholesome and flavorful, they make me feel light and satisfied all at the same time. One of my favorite versions are Greek power bowls. There are no rules here, so take what you like, and leave what you don’t. This power bowl can be made vegan, vegetarian or you can add whatever protein you like on top. Grilled shrimp or chicken would be a pretty tasty addition, in my opinion.
While the ingredients listed in the recipe are a guideline, feel free to mix it up with the ingredients that are your favorites. Greek salad traditionally has cucumber, tomato, red onion and kalamata olives, so those ingredients were a must for me. I added Minute® Ready to Serve Rice and chickpeas to really bulk up the power bowl and fuel my day. Oh and included avocado because, well, avocado… nuff said!

This is the perfect meal for most any occasion, but especially when you’re craving a healthy, hearty lunch or dinner. It packs up beautifully for work the next day for lunch. Plus, it’s ideal for serving to a crowd as it’s suitable for pretty much every kind of special diet. Win win!
This flavorful bowl is best enjoyed with pita bread or pita chips and creamy hummus. See all of my favorite hummus recipes, if you’re into whipping up a homemade variety. I even like to stuff the filling into a pita pocket. No matter how you chow down on these Greek Power Bowls, you’re sure to love them as much as my family does!

Greek Power Bowls
Ingredients
- 3-4 oz. favorite salad greens, I used a combo of kale, shredded carrots and cabbage
- 2 cups 2 containers cooked Minute® Ready to Serve Rice
- 1 cucumber, sliced or spiralized
- 1 cup pitted kalamata olives, drained
- 1 cup grape or cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 large avocado, or two smaller avocados, pitted, peeled and sliced
- 1 cup marinated artichoke hearts, drained
- 1 can garbanzo beans/chickpeas, drained and rinsed, 15 oz
- 2 tablespoons fresh chopped parsley
- fresh mint leaves
- pita chips and/or bread for serving
- hummus for serving
- tzatziki or favorite dressing, see recipe for my personal favorite below
For the dressing:
- 1/3 cup tahini
- 1/4 teaspoon sea salt
- 1/4 teaspoon garlic powder
- 1/4 cup warm water
Instructions
- Fill bowls or plates with greens. Top with brown rice, cucumber, olives, tomatoes, onion, avocado, artichoke hearts, beans, parsley and mint leaves.
- Combine dressing ingredients in a sealable jar and shake vigorously to mix.
- Serve the Greek bowls with hummus and pita chips and/or bread. Use the hummus on top of the salads and as a dip for the chips and/or bread. Dress with a drizzle of your favorite dressing, if desired, salt and pepper. Enjoy!

These are fantastic, Kim. What a great idea and they look so healthy and satisfying I can’t wait to try them. They are also perfect for making in a campervan as there is no need to get the cooker out and I can imagine they would be perfect for a summer evening sitting by the van and watching the sun go down.
