Israeli Salad With Red Bell Vinaigrette
This Israeli Salad With Red Bell Vinaigrette is so pretty, colorful, refreshing and zesty. Essentially summer in a bowl!

The classic Israeli Salad always includes cucumbers and tomatoes as the base, other additions can be finely chopped red peppers, radish, onion, herbs including parsley, mint and green onion and even root vegetables such as carrot can be added. The dressing is usually a simple drizzle of lemon, olive oil and salt. You can definitely keep things simple, but why not give this Middle Eastern salad a little extra pizzazz?
I did some experimenting with my Israeli Salad and tossed it with Victoria’s Garden Grown Red Bell Vinaigrette. Oh my! So tasty! Don’t stop with the salad, though. This Israeli Salad makes a great side dish, but I love a big bowlful of it at lunch or for a light dinner. It also works wonderfully to add it to a bed of spinach along with some grilled chicken. Or even throw it into the cooler for your next BBQ, picnic, or summer beach day!
Israeli Salad With Red Bell Vinaigrette
Ingredients
- 2 large tomatoes
- 1 English cucumber
- ½ medium red onion
- 1 red bell pepper
- 1 yellow or orange bell pepper
- 1/4 cup finely chopped mint
- 1/4 cup finely chopped cilantro
- Zest of one lemon
- Lemon juice, start with ½ a lemon, then add more to taste
- 4 tablespoons olive oil
- 1/4 cup Red Bell Vinaigrette, optional
- Salt and pepper, to taste
Instructions
- Finely dice all veggies. Smaller is best.
- Add diced veggies to a large salad serving bowl and toss with the lemon zest, lemon juice, olive oil, salt and pepper and Red Bell Vinaigrette.
- Enjoy with grilled chicken or cooked quinoa for a full meal!
