You know those Paleo Lemon Blueberry Muffins I made about a month ago? The soft, tender ones with that lovely lemon glaze that were packed with blueberry goodness? Yeah, those ones. I haven’t been able to get the deliciousness out of my head. There is just something so special about that lemon + blueberry combo. A little bit sweet, a little bit sour, a whole lot of yum.
The lemon blueberry flavor always makes me think of springtime. This smoothie is simple, too, requiring just 6 ingredients and only 5 minutes of your time.
So, say hello to my new favorite breakfast, snack and lunch (Yes, lunch!) – the one and only, Lemon Blueberry Muffin Protein Smoothie. Hiya gorgeous.
This Lemon Blueberry Muffin Protein Smoothie uses vanilla protein to give it a subtle doughiness. Fresh lemon adds a vibrant flavor that pairs so perfectly with naturally sweet blueberries and R.W. Knudsen Family Just Blueberry Juice.
This smoothie recipe is just the ticket for a lightly-sweet and satisfying breakfast, snack, or after-dinner treat!

I credit the R.W. Knudsen Family Just Blueberry Juice, frozen banana and blueberries for giving this smoothie a lovely sweetness and the blueberry flavor, of course, but the addition of lemon and vanilla protein powder really takes it from blueberry smoothie to blueberry muffin smoothie.

Lemon Blueberry Muffin Protein Smoothie {gluten-free & vegan}
Ingredients
- 1/2 cup blueberry juice
- 1/2 cup frozen blueberries
- 1/2 frozen banana
- 1/2 cup frozen cauliflower, optional
- 1 serving of your favorite vanilla protein powder, gluten-free & vegan, as needed
- 1 teaspoon lemon zest
- juice of half a medium lemon
Instructions
- Add ingredients to blender in the order listed above then blend until very smooth. Enjoy immediately!!
