Simply combine your favorite omelet ingredients for this egg in a mug recipe. I was sure to use Smithfield Anytime Favorites diced ham which makes this meal not only easy to prepare, but also adds protein and is so delicious. You can use my recipe as a guide, but feel free to add in different ingredients or even swap out ingredients. For example, you can totally leave out the cheese or use chopped tomato instead of red pepper.

Microwavable Omelet in a Mug
Ingredients
- 1 egg or 2 additional egg whites
- 2 egg whites or 1 additional whole egg*
- 2 tablespoons unsweetened almond milk or low fat milk of choice
- Pinch of salt & pepper, to taste
- 2 tablespoons diced red pepper, tomato or salsa
- 2 tablespoons shredded cheese of choice
- 2 tablespoons Smithfield Anytime Favorites diced ham
- 5 spinach leaves, chopped
Instructions
- Spray a microwave safe mug with cooking spray. Beat together eggs, milk, and stir in additional ingredients, in the mug.
- Microwave for about 2 minutes and until egg is set.

i’ve heard about all the cool things you can do with a mug and a microwave, but this takes the cake! i’ve never tried to make an omelet in the microwave before but this seems so simple.
