I strive to provide the most wholesome and nourishing foods for my family. But why stop with the foods? The other things we put on and in our bodies can be just as important. Recently, I’ve been taking a hard look at products we use everyday, like toothpaste, deodorant and mouthwash. One of my goals for 2017, is to be using all organic and natural products without additives by the end of the year. The all-natural high-quality products from Tom’s of Maine has made this an easy transition.

This healthy lifestyle change all started with the food – my kiddos and I have always had a thing for snack bars. We’ve enjoyed the store-bought crunchy kind and more recently moved on to a more basic oat version. But somewhere along the line I became suspicious of the ingredients – namely high fructose corn devil – and strayed away from them altogether.

Soft Baked Oat Snack Bars
Ingredients
- 2 cups quick oats
- 1/2 cup vanilla protein powder
- 1/4 cup finely shredded coconut
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup almond butter (or any nut butter)
- 1/4 cup brown rice syrup (or honey)
- 1/2 cup unsweetened vanilla almond milk (or other desired milk)
- 1 teaspoon vanilla or coconut extract
- 1/3 cup mini chocolate chips (dairy-free if vegan) + additional mini chocolate chips for drizzle
Instructions
- Preheat oven to 350F degrees and prepare an 8x8 baking pan by spraying it with cooking spray. Set aside.
- In a large mixing bowl, combine oats, protein powder, coconut, cinnamon and salt. Set aside.
- In a medium mixing bowl, stir together almond butter, brown rice syrup, almond milk and vanilla.
- Pour wet mix into dry mix and stir until fully combined. Fold in chocolate chips.
- Pour into prepared baking pan. Spread the mixture evenly in the pan. Use the back of a spoon to press down firmly.
- Bake for 18-20 minutes, until edges begin to turn golden brown.
- Remove from oven and let cool in pan for 20 minutes before cutting.

Looks good but do I have to use protein powder? I don’t have any – thanks!
I think these will work just fine without the protein powder. You might add about 1/4 cup additional quick oats and if you’re able to grind the additional quick oats in a blender or food processor, even better.
Great info and those bars would be great for my kiddos lunch boxes! YAY!
