Greek Pita Pizzas are a delicious and easy way to satisfy your pizza craving whenever it strikes! Customize your pitas or give them a Mediterranean twist with roasted red peppers, artichokes, red onion, olives and basil! This recipe is quick enough for a busy weeknight meal, but so perfect for movie night too!
6pitas (or more, buy at least one for each person you're serving)
1cuppizza sauce or marinara sauce
1cupshredded mozzarella cheese
roasted red peppers from a jardiced
quartered artichoke hearts from a canchopped
red onionthinly sliced
kalamata olives or black olivessliced
Optional garnishes: feta cheese or parmesan cheese, chopped fresh basil and red pepper flakes
Instructions
Preheat oven to 450ºF with a pizza stone, if you have one.
Spread desired amount of marinara sauce over pitas and then evenly distribute all other toppings evenly over the pita pizzas, beginning with shredded mozzarella, followed by roasted red pepper, artichoke, red onion, olives and lastly, the feta or parmesan cheese.
Bake pizzas on a pizza stone or directly on the oven racks, placing a baking sheet underneath to catch any drips. Bake 5 to 10 minutes until crispy and the cheese is melted. Transfer pizza to a cutting board and sprinkle with torn fresh basil. I sprinkled mine with red pepper flakes, too. Slice and serve!
